Default Stage 0 (Emulation of Stock) Map Stronger than Stage 1?

I installed an Accessport v3 on my 2011 Mazdaspeed 3 last weekend. The car has 65k miles, has been well-maintained, and is in essentially stock configuration. The only engine modification is a Cobb cat-back exhaust. I loaded the Stage 1 map and was shocked to find a substantial reduction in mid-range torque, from roughly 2700 to 4500rpm. It almost felt like a safe mode, but no trouble codes were thrown. I drove it for a week like this, figuring the ECU might “learn” and improve, but it did not. Loading the Stage 0 map yesterday brought back the power and seemed to resolve the issue.

Does this seem like a normal response for a stock car?
Has anyone else experienced something like this?

Yes. Cobb's off-the-shelf maps are atrocious, neutered, and calibrated to try and be "safe" on any car to which they're installed. You need a tune customized for your modifications by a professional tuner.

you may datalog both tune and compare data to see what is going on. You may post it here and we will take a look...

As stated above these tunes are not the best but did you make sure you got the proper one based on what is listed from Cobb website?

I don't know all details about them but if you flash a tune made for a slightly larger intake and still have the oem, it may read higher load values and choke your car power a bit....

Back in time, i remember the biggest change i did notice with stage 1 was removing the boost limit of first and second gears without much feeling of power gains but it was 10 years ago lol.....

If you check for leaks and you didn't made a test under compressor pressure, you aren't done checking for leaks....
